Together with Cereal and Legumes Flours, we offer special flours, such as Hemp, Tapioca and Chestnuts, as well as Gluten-Free Flour Mixes, ready to use. The perfect mix of taste and innovation, all GEMME Bio Organic Flour Mixes are100% gluten-free and intended to meet the most different needs in the kitchen: sweet leavened dough as the classic ciambellone or plumcake, unleavened like shortbread and cookies or salted leavened dough for bakery products such as pizza, bread and focaccia.
When necessary, the grains are processed into facilities dedicated to gluten-free products only. Moreover, most of our flour is stone ground and made of raw materials from a controlled supply chain. Thanks to this type of processing, the nutritional and organoleptic properties of the ingredient remain intact as the stone grounding makes it possible to work at low temperatures. This technique prevents the flour from overheating and losing – with the increase in temperature – the elements that contribute to enrich its taste, aroma and nutritional quality.
